Yes, it's more work but, undoubtedly, well worth the extra effort I loved seeing mashed potatoes at the dinner table growing up, not only because I loved mashed potatoes, but also because it meant my mother would be using the leftovers to make fried mashed potato pancakes. I've never met a potato pancake I didn't like, but some of my favorites are Korean gamjajeon, which are frequently made into mini sizes perfect for dipping into vinegared soy sauce and served as a savory appetizer, side dish, or snack Spray or brush the pan with oil (e.g. coconut or canola oil work fine!) to avoid the pancakes sticking to the pan. Especially for these Sweet Potato Pancakes, it's important to cook them over medium heat and to give them enough time to cook all the way through. They're good to flip when the sides set and you can see tiny bubbles in the middle
